Thank you all for your replies.
I think the bottom line is a) make sure you want to have a transparent background, and b) if you want to 'undo' the transparency, build a new frame with the original artwork.

Undoing Transparency
I set the transparency on a gif image, then save the file, then exit Easy GIF.
I come back later and decide I don't want the transparency on the gif image - how do I 'undo' the transparency?
