Hello,
if I want to rename a file in Windows-Explorer I can use the hotkey "F2". In WeBuilder's file explorer the "F2" key opens the selected file in browser for preview. Is it possible to change this hotkey in current oder future versions of WeBuilder?

Yes, you can do this. Options - Keyboard Shortcuts -> Find the shortcut currently using F2 and remove or change it.
