It seems pretty hard to define all file types (*.*).
Why is that so?

I've setup all my projects this way with *.* for the file types, and not had any problems at all.
You are correct that when you type the first * it shows the original list of files, but continue typing the *.* and it accepts it.
This is normal behaviour for a combo-list-box in Windows where it will show any existing matching entries as you type.
